Cider and Cheese...a Combination to Please!

Island Style Cider Baked Feta
1 block of Island Pure Sheeps Milk Feta
1/2 red onion finely chopped
1 Tablespoon Island Brew Pink Lady Cider
1/2 Teaspoon fresh lemon juice
Freshly ground black pepper
Drizzle of KI Wild Extra Virgin Olive Oil
Place the feta on a large square of aluminium baking foil and top with the onion. Grind a little pepper over the top. Mix together cider, lemon juice and oil, then drizzle over the feta. Bring corners together over top of cheese to seal the foil parcel and place it on a baking tray. Place tray in a hot oven and leave for 20 minutes. Remove from oven, unwrap cheese and enjoy as a hot dip or as a filling in warm pitta bread with salad. Best eaten straight from the oven as the cheese will harden again once cool.
A glass of the Pink Lady Cider goes down well with this gorgeous, gooey feest as well!
Remember too that this one will disappear quickly...if you have a large crowd, make extra parcels so everyone can enjoy it hot from the oven!
